Grape varieties:<\/strong> Xarel.lo, Macabeu and Parellada.
\nRegion:<\/strong> D.O. Cava.
\nSub region:<\/strong> Upper Penede\u0300s (Parellada) and Central Penedes (Xarel.lo and Macabeu).
\nAltitude of the vineyards:<\/strong> 110m (Xarel.lo), 250m (Macabeu) and 315m (Parellada).
\nClimate:<\/strong> mild Mediterranean.
\nAnnual rainfall:<\/strong> an average of 250 litres per square metre.
\nSoil:<\/strong> clay and calcareous.<\/p>\n

1st FERMENTATION: must to base wine<\/h3>\n

Harvest:<\/strong> hand gathered to select the best grapes between September and October when each variety is at its peak of maturation.
\nPressing and must fermentation:<\/strong> pneumatic press. Musts selection, only the best juices will be for the Ramon Canals Reserva Numerada Vintage elaboration. Each variety of grapes fermented separately at a constant temperature of 16\u00baC in stainless steel tanks.<\/p>\n

2nd FERMENTATION: base wine to cava Reserva<\/h3>\n

The base wine blending:<\/strong> Xarel.lo 50%, Macabeu 25%, Parellada 25%.
\nBottling period:<\/strong> January.
\nFermentation temperature:<\/strong> 15-18 \u00baC.
\nAgeing period:<\/strong> for more than 24 months on lees. Vintage dated each year. Recently disgorged. Sugar added: 17 g\/L Brut.<\/p>\n

TASTING NOTES<\/h3>\n

Appearance:<\/strong> presents a pale yellow coloured cava with fine and persistent bubbles.
\nAroma:<\/strong> intense aroma with fruity hints and gentle notes of ageing.
\nPalate:<\/strong> fresh, silky, slightly sweet and very round palate. Gastronomy: recommended for assorted salads, pasta, rice and fish dishes.
\nTips:<\/strong> served cold, between 6\u00baC to 8\u00baC, in tulip glass type, transparent, tall, thin and without decoration.<\/p>\n

The Canals Canals family elaborated this cava with the traditional grape varieties from Penede\u0300s region Xarel.lo, Macabeu and Parellada, following the Traditional Method, secondary fermentation of wines in the bottle and aged on lees for over 24 months in our cellars.<\/p>\n
