Cava. Sub region: Upper Penede\u0300s (Chardonnay and Pinot noir).<\/li>\n<li><strong>Altitude of the vineyards<\/strong>: 250m (Chardonnay and Pinot noir).<\/li>\n<li><strong>Climate:<\/strong> mild Mediterranean.<\/li>\n<li><strong>Annual rainfall<\/strong>: an average of 350 litres per square metre.<\/li>\n<li><strong>Soil:<\/strong> clay and calcareous.<\/li>\n<\/ul>\n<h3><span style=\"color: #cbb262;\">1st FERMENTATION: must to base wine<\/span><\/h3>\n<ul>\n<li><strong>Harvest<\/strong>: hand gathered to select the best grapes. In August when each variety is at its peak of maturation.<\/li>\n<li><strong>Pressing and must fermentation<\/strong>: pneumatic press. Musts selection, only the best juices will be for the Duran Reserva Special Cuv\u00e9e elaboration. Each variety of grapes fermented separately at a constant temperature of 16\u00baC in stainless steel tanks.<\/li>\n<\/ul>\n<h3><span style=\"color: #cbb262;\">2nd FERMENTATION: base wine to Reserva cava<\/span><\/h3>\n<ul>\n<li><strong>The base wine blending<\/strong>: Chardonnay 80% and Pinot noir 20%.<\/li>\n<li><strong>Bottling period<\/strong>: February<\/li>\n<li><strong>Fermentation temperature<\/strong>: 15-18 \u00baC.<\/li>\n<li><strong>Ageing period<\/strong>: for more than 24 months. Vintage dated each year.<\/li>\n<\/ul>\n<h3><span style=\"color: #cbb262;\">TASTING NOTES<\/span><\/h3>\n<ul>\n<li><strong>Appearance<\/strong>: presents a yellow pale colour with fine and persistent bubbles.<\/li>\n<li><strong>Aroma<\/strong>: fresh, ripened fruits, creamy citrus notes with slightly nutty nose.<\/li>\n<li><strong>Palate<\/strong>: perfectly balanced, pleasant with long and clean finish.<\/li>\n<li><strong>Gastronomy<\/strong>: recommended for aperitifs, fish dishes, oysters and shellfish.
