Region: D.O. Cava. Sub region: Central Penedes (Macabeu, Xarel.lo and Garnatxa) and Upper Penede\u0301s (Parellada).<br \/>\n<strong>Altitude of the vineyard<\/strong>s: 110m (Xarel.lo) 250m (Macabeu and Garnatxa) and 320m (Parellada).<br \/>\n<strong>Climate<\/strong>: mild Mediterranean.<br \/>\n<strong>Annual rainfall<\/strong>: an average of 515 litres per square metre.<br \/>\n<strong>Soil<\/strong>: clay and calcareous.<\/p>\n<h3><span style=\"color: #ff99cc;\">1st FERMENTATION: must to base wine<\/span><\/h3>\n<ul>\n<li><strong>Harvest<\/strong>: hand gathered to select the best grapes in September when each variety is at its peak of maturation.<\/li>\n<li><strong>Pressing and must fermentation<\/strong>: musts selection, only the best juices will be for the Marta Passio\u0301 Reserva elaboration.<\/li>\n<li>Each variety of grapes fermented separately at a constant temperature of 16\u00baC in stainless steel tanks.<\/li>\n<\/ul>\n<h3><span style=\"color: #ff99cc;\">2nd FERMENTATION: base wine to Reserva cava<\/span><\/h3>\n<ul>\n<li><strong>The base wine blending<\/strong>: 40% Xarel.lo, 35% Macabeu, 20% Parellada and 5% Garnatxa.<\/li>\n<li><strong>Fermentation temperature<\/strong>: 15-18 \u00baC.<\/li>\n<li><strong>Ageing period<\/strong>: for more than 24 months. Vintage dated each year. Sugar added: 6 g\/L Brut.<\/li>\n<\/ul>\n<h3><span style=\"color: #ff99cc;\">TASTING NOTES<\/span><\/h3>\n<ul>\n<li><strong>Appearance<\/strong>: delicate pale rose\u0301 colour with fine persistent bubbles.<\/li>\n<li><strong>Aroma<\/strong>: fresh, floral, ripened red fruits with slightly nutty nose.
