Cava. Sub region: Upper Penedes (Parellada) and Central Penedes (Xarel.lo and Macabeu).<\/li>\n<li><strong>Altitude of the vineyards<\/strong>: 110m (Xarel.lo), 250m (Macabeu) and 315m (Parellada).<\/li>\n<li><strong>Climate<\/strong>: mild Mediterranean.<\/li>\n<li><strong>Annual rainfall<\/strong>: an average of 465 litres per square metre.<\/li>\n<li><strong>Soil<\/strong>: clay and calcareous.<\/li>\n<\/ul>\n<h3><span style=\"color: #5bd99a;\">1st FERMENTATION: must to base wine<\/span><\/h3>\n<ul>\n<li><strong>Harvest<\/strong>: hand gathered to select the best grapes in September when each variety is at its peak of maturation. Organic farming vineyards. Pressing and must fermentation: pneumatic press. Musts selection, only the best juices will be for the Marta Joia Organic farming Reserva elaboration.<\/li>\n<li>Each variety of grapes fermented separately at a constant temperature of 16oC in stainless steel tanks.<\/li>\n<\/ul>\n<h3><span style=\"color: #5bd99a;\">2nd FERMENTATION: base wine to cava Reserva<\/span><\/h3>\n<ul>\n<li><strong>The base wine blending:<\/strong> Xarel.lo 40, Macabeu 30%, Parellada 30%. Fermentation temperature: 15-18 \u00baC.<\/li>\n<li><strong>Ageing period<\/strong>: for more than 24 months. Vintage dated each year. Sugar added: 6 g\/L Brut.<\/li>\n<\/ul>\n<h3><span style=\"color: #5bd99a;\">TASTING NOTES<\/span><\/h3>\n<ul>\n<li><strong>Appearance<\/strong>: It presents a pale yellow coloured cava with fine and persistent bubbles.<\/li>\n<li><strong>Aroma<\/strong>: white fruit, citrus, floral notes and gentle aromas of ageing.
